You will have enough for two or three sandwiches so keep any you don’t eat in the brine for another time.
Peel the carrot and daikon and then chop into longish sticks and put them in a bowl. Add the sugar and salt and massage them into the vegetables. Set aside for 20 minutes, until you start to see some brine gather, then wash the carrot and daikon off and dry on kitchen towel.
