This is a Noto favourite, super easy to prep, and a bit of a crowd pleaser. I love beetroot in all forms — pickled beets from a jar are a go-to snack — and I could easily eat all four servings of this myself. Lanark Blue is made by the Errington Farm people, who make a handful of truly excellent cheeses in South Lanarkshire.
Dress the red and golden beetroot in some of the vinaigrette and arrange on the plate. Top with smoked yoghurt and dress with pickled shallot rings. Crumble over small amounts of Lanark Blue and add layers of linseed crackers.
Slice the candy cane beetroot to 1mm thick on a mandolin and cut with a ring cutter. Dress the beetroot in a little more vinaigrette and lay on top of the salad.
