  • 188 g unsalted butter, cubed

Method

In a stand mixer with the paddle attachment fitted, mix the flour and butter until it resembles small breadcrumbs. Add the milk, sugar, salt, egg and egg yolk and mix until it comes together in a smooth paste. Wrap in clingfilm and rest in the fridge for 30 minutes.
