The top round is a delicious cut of beef that is sometimes marketed as London broil; it’s less expensive than flank steak and equally delicious. The marinade is really just some olive oil seasoned with fresh herbs and garlic; it keeps the meat from drying out when grilling or broiling. You can add a splash of red wine to the marinade if you wish, but don’t add lemon juice because it can break down the meat.

This makes more than enough for four people, but the meat is delicious left
