This dainty fried Bengali bread is addictively good and works so well with my coconut and sultana chana dal and spicy potato curry. It’s very similar to the North Indian puri, the main difference being the flour used and the bronzing. Luchi use plain flour and remain white in colour, whereas puri are made with wholewheat flour and become bronzed.
