This simple marinade infuses chicken with great flavor. The chunks of grilled chicken are so moist and tender. This tasty combination of yogurt, fresh ginger, lemon, and spices will become one of your favorite ways to marinate chicken.


For the Chicken

  • ¼ cup plain yogurt
  • 1 tablespoon lemon zest
  • ¼ cup freshly squeezed lemon juice
  • ¼ cup minced yellow onion
  • 1 packed tablespoon peeled and grated fresh ginger (use the large holes of a grater)
  • ¼ cup ketchup
  • 1 teaspoon salt
  • ¼ teaspoon coarsely ground black pepper
  • ½ teaspoon ground allspice
  • ¼ teaspoon ground cinnamon
  • pounds trimmed boneless skinless chicken breast, cut into 1½ × 1½-inch pieces (about 20 pieces)
  • 1 tablespoon apple cider vinegar
  • 8 pieces zucchini, whole round slices ¾ inch thick (select narrow zucchini)
  • 1 teaspoon olive oil


    Prepare Ahead

    The marinade can be prepared several days in advance and refrigerated. The chicken skewers can be refrigerated for several hours prior to grilling. Grill the same day, as directed.
