The meat on these grilled rib chops is so tender and delicious, it’s like butter. The marinade of balsamic vinegar coupled with fresh lemon, onion, and spices gives the chops great flavor. They are especially appetizing served on a bed of fresh herbs.


For the Rib Chops

  • pounds lamb rib rack, cut into 8 rib chops (1-inch-thick chops)
  • 3 large cloves garlic
  • ½ teaspoon salt
  • ½ cup grated yellow onion (use the large holes of a grater), squeezed dry
  • 2 tablespoons freshly squeezed lemon juice
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon spicy mustard
  • ½ teaspoon coarsely ground black pepper
  • ¼ teaspoon ground allspice
  • teaspoon ground cinnamon
  • (You can substitute lamb loin chops.)


    Prepare Ahead

    The rib chops can be marinated early in the day. Cover and refrigerate. Grill the same day as directed.
