Sweet potatoes are frequently served at Thanksgiving and they are a delicious accompaniment to ham and pork, as well as poultry. They were introduced to Europe by Columbus in 1493 and were soon known as Spanish potatoes. In Tudor England they were enjoyed in the form of crystallised slices. They are delicious baked in their jackets like ordinary potatoes but they are particularly appetising candied, when they come out of the oven a lovely glazed orange colour.
