Hash Brown Potatoes are served in many roadside cafés with eggs or hamburgers. The crispy brown covering with the soft potatoes underneath is absolutely delicious and makes a welcome change from french fries. You can use diced boiled potatoes but the grated potatoes are even nicer.

Ingredients

Peel and then coarsely grate the potatoes. Place them in a sieve and press them down with a large spoon or your hand to extract some of the liquid. Leave to drain.
