  • 1.2 kg (2 lb 10 oz) all-purpose potatoes, such as desiree, unpeeled and cubed

  1. Steam or boil the potato for 5–10 minutes, or until the potato feels tender when tested with the point of a knife. Don’t let the skins break away. Drain and cool completely.
