  • 625 g (1 lb 6 oz/4 cups) fresh or frozen peas


  1. Place the peas in a saucepan and pour in water to just cover the peas. Add the mint sprigs.
  2. Bring to the boil and simmer for 5 minutes, or until the peas are just tender. Drain and discard the mint sprigs. Return to the saucepan, add the butter and shredded mint and stir over low heat until the butter has melted. Season with salt and freshly gr
