This classic pizza was supposedly created in 1889 in honour of Queen Margherita. The queen had heard so much of the fabled pizzas of Naples that she requested one to eat when she visited the city.

Ingredients

  • 1 × 30 cm (12 inch) pizza base (opposite)
  • ½ quantity tomato sauce (opposite)

Method

  1. Preheat the oven to 240°C (475°F/Gas 8). Place the pizza base on a baking tray dusted with polenta and spoon the tomato sauce onto the base, spreading it up to the rim. Scatter with the mozzarella and basil, if using. Drizzle with the oil.
