• 250 g (9 oz/2 cups) medium oatmeal
  • ½ teaspoon baking powder
  • 2 teaspoons soft brown sugar
  • 60 g ( oz) butter, melted
  • oatmeal, extra for sprinkling


  1. Preheat the oven to 180°C (350°F/Gas 4). Line two baking trays with baking paper.
  2. Combine the oatmeal, baking powder, sugar and a pinch of salt in a large bowl. Make a well in the centre and add the melted butter and 125 ml (4 fl oz/½ cup) hot water.
  3. Using a flat-bladed knife, mix to form a dough. Gather the dough together and turn onto a surface lightly sprinkled with extra oatmeal, then press into a flattish round.
  4. Roll the dough out to a thickness of 5 mm (¼ inch), sprinkling with extra oatmeal. Cut the dough into 6 cm ( inch) rounds with a biscuit cutter. Place on the baking trays, leaving room for spreading. Bake for 25 minutes, or until golden. Cool on the trays for 5 minutes, then transfer to a wire rack to cool completely. Store in an airtight container.
