  1. To make the filling, put the milk in a small saucepan and bring to the boil. Set aside while quickly whisking the egg yolks and sugar in a bowl until combined. Whisk the flour into the egg mixture. Pour the hot milk slowly onto the egg and flour mixture, whisking constantly. Wash out the saucepan, return the milk mixture to the pan and bring to the boil,
