Ingredients

  • pounds carp fillet, cut in 1 piece
  • Salt
  • 3 tablespoons flour
  • 1 tablespoon paprika
  • 4 tablespoons butter, clarified Butter Dough

Method

  1. Preheat oven to 375°F. Salt fish and roll it in a mixture of flour and paprika. Shake off excess.
  2. Heat clarified butter in frying pan, reduce heat to low, and very slowly fry fish on both sides.
  3. Line an oblong ovenproof casserole (9 by 6 inches) with a sheet of butter dough.
  4. Place fish in the center and fold the dough over and around fish. Brush the dough with egg white.
  5. Bake the fish in the preheated oven for 40 to 45 minutes. Serve with Horseradish Sour-Cream Sauce.
