Apple and Savoy-Cabbage Salad

  • 1 small young Savoy cabbage
  • Salt
  • 2 tablespoons sour cream
  • 1 teaspoon prepared mustard
  • 1 teaspoon sugar
  • Pinch of pepper
  • 3 apples
  • Juice of ½ lemon
  • 6 fresh mint leaves, minced

  1. Wash the young cabbage leaves 4 or 5 times, then cut into a thin slaw. Put in a bowl and sprinkle with salt. Place a plate on top to press it down.
  2. After about 30 minutes, press out as much liquid as possible.
  3. Meantime mix sour cream, mustard, sugar and pepper. Only now peel and slice the apples, and immediately mix them with lemon juice to prevent browning.
  4. Mix apples with cabbage and dressing. Sprinkle salad with the mint. Serve with cold meat or poultry.
