Rolled Beef with Cheese, Sage and Garlic

This is a delicious way of cooking stewing beef, both easy and quite fun to make. The mingling of flavours, with the melted cheese, is unusual and very good. I usually serve layered potatoes and onions cooked in the oven with this, together with a green vegetable.

Ingredients

  • 2 lb (900 g) stewing beef, cut into thin slices
  • a handful of fresh sage leaves</

Method

Lay out the pieces of beef. Chop the sage and garlic together very finely. Slice the cheese thinly into as many slices as there are of beef. Smear each piece of beef generously with tomato purée and sprinkle with salt and pepper. Lay on a slice of cheese and then pat on the finely chopped sage and garlic. Roll each piece of beef over and secure with a toothpick.
