A beautiful variation on the traditional Iraqi omelet, makhlama, usually cooked with meat.


  • 2 tablespoons oil
  • 1 medium onion, chopped
  • ½ teaspoon c


  • In a big non-stick skillet heat oil and sauté onion, about 5 minutes. Add curry powder, spinach, parsley, dill, salt, and pepper. Stir gently until most of the moisture evaporates.
  • Level surface with the back of a spoon, and make six hollows into which you break the eggs. You may leave eggs whole, sunny-side up, or zigzag surface with a knife to break yolks and l
