When the yearning strikes for a homely dessert, bread and butter pudding is hard to beat. For special occasions, this humble and economical dish can be transformed into something really marvellous with glacé fruits, a dash of rum, some brioche or, as in this case, Italian panettone.

Ingredients

  • 3 tablespoons sultanas
  • 2 tablespoons rum, brandy or amaretto

Method

  1. Preheat the oven to warm 160°C (315°F/Gas 2-3). Place the sultanas in a 23 cm (9 inch) oval pie dish and pour the alcohol over the top.
  2. Cut the panettone to make two or three round slices about 1 cm (½ inch) thick, then remove the crust. Cut each slice
