  • 100 ml milk
  • 20 g mild honey (i use organic ligurian honey from kangaroo island)

Method

  1. Heat the milk and honey in a small heavy-based saucepan over low heat to simmering point. Using an electric mixer, whisk the egg yolks and caster sugar in a heatproof bowl for 5 minutes or until the sugar has dissolved and the mixture is pale and creamy.
