This is a Lebanese style burger – basically a grilled, meat-stuffed pitta – for you to get your chops around. Use rectangular pittas if you can so they’re easier to cook on all sides.
Combine the mince with the tomato purée, salt, pepper, smoked paprika, onion powder, garlic powder, chilli powder and fresh herbs in a bowl. Mix well to make sure the meat is flavoured evenly. If you want to add cheese, mix some in now.
