Get a saucepan on a medium heat, add the butter, let it melt and then add the flour. Mix it up into a soft paste and then gradually stir in the milk. Keep stirring until the roux has liquified, then add the cheese and keep stirring until it thickens slightly. Set aside while you make the bolognese.
