A fresh vegetable juice or fruit juice is another sweet liquid you can add your kefir grains to. You can use any juice for this recipe but apple and beetroot is a particularly lovely combination. Adding kefir grains and fermenting for 24 hours adds a slight fizz to the sweetness; you will still have all the benefits of the apple and beetroot, and with added probiotic strains it becomes a super-healthy juice. Note that your kefir grains will become and stay pink for some time after making this ferment!

You can use bought or homemade juice but it is nicer to make your own if you have a juicer. Use a third of beetroots and two-thirds of apples until you have a litre of it. Many health food shops have a juice bar and will make up juices exactly how you want them or you can buy them separately as apple juice and beet juice and then mix them yourself.
