Ingredients

  • 1 lb. dry lima beans
  • 1 onion, chopped
  • 1 bell pepper, chopped

Method

  1. Cover beans with water. Soak 8 hours. Drain.
  2. Combine ingredients in slow cooker.
  3. Cover. Cook on Low 7 hours, or on High 4 hours.
  4. If mixture begins to dry out, add ½ cup water or more and stir well.
  5. This is delicious served with hot cornbre
