This is the easiest, laziest supper in the world. And it’s good for you, too. You can use other soft vegetables - courgettes or mushrooms - instead of aubergine if you like. It’s a complete meal in a dish, so not much washing up afterwards either!


  • 225 g (8 oz) basmati rice

  1. Preheat the oven to 200°C/400°F/gas mark 6.
  2. Put the rice in a sieve and wash it until the water runs completely clear. Brush a shallow ovenproof dish with the oil, then tip in the rice, onion and aubergine. Season well, then add all the other ingredien
