This is the easiest, laziest supper in the world. And it’s good for you, too. You can use other soft vegetables - courgettes or mushrooms - instead of aubergine if you like. It’s a complete meal in a dish, so not much washing up afterwards either!

  1. Preheat the oven to 200°C/400°F/gas mark 6.
