Wow! These were inspired by stuffed Mexican tortillas and the flavour combo is fabulous. If you aren’t keen on smoked fish, use chorizo or any other spicy sausage instead. You can buy your rotis instead of making them (though they’re very easy to make), or use Indian or Middle Eastern flatbreads and just warm them through.

Ingredients

  • 8 plum tomatoes, halved
  • 2 tbsp olive oil
  • 2 tsp.

Method

  1. Preheat the oven to 190°C/375°F/gas mark 5. Put the tomatoes in a small roasting tin and drizzle over half the oil. Sprinkle over the sugar and hot pepper sauce, season, then turn the tomatoes over with your hands to cover evenly with the oil.
