My mother is Canadian and I was brought up with dill pickles, as these pickled cucumbers are known throughout North America. In July, each summer of my childhood, a day or two – it seemed like a week – was devoted to the business of putting up the pickles. In France you see the small dark green gherkin-cucumbers on sale in the markets from the end of June until September. The vegetable is prepared in the same way as for dill pickles but on the whole the French prefer to flavor the pickling
