This is a dish I invented one day when I had some delicious cold salmon caught in a haaf-net on the Nith and for some reason some leftover gnocchi and decided to make some fishcakes. The gnocchi was commercial—no need to make your own for this—and gnocchi has, of course, already been mixed with eggs and flour. I preferred the texture to the usual mashed potatoes used in fishcakes—I hope you enjoy them, too.
