This is another favourite Cambridge pudding, an 18th century recipe used up to the time of the Great War.

Ingredients

  • Sponge cakes
  • raspberry jam
  • orange marmalade
  • ratafias
  • sherry
  • bran

Method

  1. Spread some sponge cakes with raspberry jam.
  2. And some with orange or apricot marmalade; arrange them in a dish alternately.
  3. Add some ratafias.
  4. Soak the cake with sherry.
  5. Sweeten ¾ pint of cream, add
