  • Boiling water, 1 pint
  • isinglass 1 oz.
  • eggs

Method

  1. Pour the boiling water on the isinglass.
  2. Let it stand half an hour.
  3. Add the yolks of the 8 eggs but only the whites of 4.
  4. Add the juice of the 3 lemons, but the thin rind of only 1.
  5. Beat all together and add the wine.
  6. Sweeten to taste.
  7. Put into a saucepan, and stir over the fire till it begins t
