A fun variation, particularly for the benefit of the children, are les crêpes frisées or les crêpes à l’entonnoir. With the aid of a funnel filled with the batter, you employ whatever tour de main you possess to trickle the batter into the pan in a sort of spiral so as to make a haphazard pattern, leaving the pancake with holes and irregularities whose edges all go frisées and crisp.
