American Baking Powder Biscuits

  • ½ pound plain flour
  • 3 level teaspoons baking powder
  • ½ level teaspoon salt
  • 4-6 tablespoons butter
  • ¼ pint milk

Sift flour, baking powder and salt into a mixing bowl. Rub softened butter into mixture with pastry blender or your fingers; then add milk, stirring mixture quickly, until you have a soft but not sticky dough.

Knead dough with floured fingertips on a lightly-floured board just enough to shape it into a smooth ball; roll or pat out lightly to ½-inch thickness and cut in rounds with a floured glass or biscuit cutter. Bake on a greased baking sheet in a hot oven (450°F. Mark 7) for about 15 minutes, or until biscuits are golden brown.
