Ingredients

For the salad

  • 3 ribs celery, very thinly sliced on the diagonal
  • 1 bulb fennel, cleaned, cut in half vertically, and very thinly sliced

Method

Make the salad

Combine the celery and fennel in a bowl and toss with the lemon juice to prevent discoloring. Add all the remaining ingredients and toss well.

Make the dressing

Put the lemon juice in a small bowl and whisk in the oils in a thin trickle; season with salt and pepper. Pour the dressing over
