  • 1 11-oz. box dried currants
  • ¾ cup water or orange juice


  1. Wash the currants in warm water, pick over for any stems, drain well, and squeeze dry. Place in a saucepan. Add the water or orange juice and several thin slices of orange rind removed with a vegetable peeler.
  2. Cook slowly, covered, for 1 hour or until almost dry. A diffuser on the burner will help avoid scorching.
