These sauces differ little from boiled jams, and the steps taken to make them are practically the same. Any type of fruit can be made into a tasty spiced sauce by adding some vinegar and a selection of spices. The texture of your finished sauce will be determined by the fruit you use, so for a smoother sauce, just whir the fruits in a blender or food processor before cooking or after they are soft. When whole spices are used, they can be left in the finished product or removed, but leaving them in will allow a little more flavor to develop over time. These sauces are a wonderful treat with meats or by themselves used as jam. You can easily customize your sauce by adding other fruits and spices, so feel free to experiment. Your yield will depend on how much fruit and other ingredients you use, but it will be about 10 to 12 ounces of sauce for every 8 ounces of everything measured before adding sugar.
