Prepare sweetbreads for broiling as in preceding recipe. Preheat broiler 10 minutes. Dip sliced sweetbreads into melted butter and then lay them on a hot broiler. Cook each side about 5 minutes at 2 inches from the heat. Baste each side once with melted butter during cooking time. Serve broiled sweetbreads with one of the following hot butter sauces: Beurre Blanc, Currie, or Meunière; or as follows.
