This ancient recipe came all the way from North Africa with the Luzon family. Soaking the fava beans in advance aids with digestion, and helps the beans cook faster and more evenly.

Ingredients

  • cups (300 grams) split small dried white fava beans
  • 1 teaspoon kosher salt

Method

  1. Place the fava beans and kosher salt in a large bowl, add water to cover by at least 2 inches (5 centimeters), and soak for at least 2 hours.
  2. Drain the fava beans and rins
