This traditional hummus dish, made with spicy ful (cooked fava beans) and chickpeas, is very similar to Meshulash Triple Hummus from Jaffa. This one takes its name from the Arabic word for “Jerusalem.”

Method

  1. To prepare the hummus: In a food processor, process the cooked chickpeas to a smooth paste. Add the chickpea cooking liquid and process to incorporate. Add the tahini, lemon juice, and salt, and process until the texture is smooth and creamy, about 5 minutes.
  2. To prepare the fava beans, ful medames-style: Heat the olive oil in a large pan over medium-high heat.
