When making tahini sauce, the most important thing to remember is that everything is reversible. If it seems that the sauce has broken, or is too thin or thick, you can always add more tahini (if it is too thin), more water (if it is too thick), or continue to mix until you are happy with the consistency.

  • ½ cup (120 grams) raw tahini (preferably Al-Arz brand)

Method

  1. Place the water, salt, and citric acid or lemon juice in a small bowl and mix well.
  2. Gradually pour in the tahini, stirring continuously, until the texture is smooth. Season to taste.
