Nothing against a good old, classic banana muffin, but this recipe will have people talking. Big bites of swirly cinnamon remind me of my favorite treat ever, cinnamon raisin bread. This recipe makes jumbo muffins, but if you like, you can make regular-size muffins. Just do two layers of batter and cinnamon mixture instead of three.

Ingredients

For the muffins

  • cups (335 g) mashed banana, from about 3 very ripe bananas

Method

  1. Preheat the oven to 350°F (175°C). Grease a jumbo muffin pan and set aside.
  2. In a bowl, mix well the mashed bananas, milk, applesauce, coconut oil, and vanilla.
