  • 2 chicken breasts (ie all the breast meat from one bird)
  • level teaspoons salt
  • 1 teaspoon

Method

I would not attempt this dish on electricity because it is far too hot to control. Cut each breast in half lengthways and flatten between sheets of greaseproof paper, with a blunt instrument, to form thin ‘schnitzels’. Mix all the other ingredients together, except the oil, lettuce and mayo. Stir in enough olive oil to make a basting liquid.
