This is a quick and easy way to cook cabbage. It tastes excellent, and the cabbage is in the pan for so short a time that it loses none of its goodness.


  • 1 medium-sized white or green cabbage
  • 1 medium-sized onion
  • salt and pepper


Shred the cabbage finely and chop the onion. Heat the oil or butter in a heavy frying-pan. Fry the onion until soft; add the shredded cabbage, and salt and pepper to taste. Stir continuously while frying for 2 minutes, then cover and continue cooking for not more than 5 minutes. Stir again. Break the eggs into a bowl, season with salt and pepper, and beat thoroughly.
