One of the most versatile sauces we know, this easy-to-make mayonnaise can accompany almost anything. These days there are also plenty of good-quality jars of mayonnaise available, so it’s not essential to make your own.

Ingredients

  • 2 egg yolks
  • 1 tablespoon white wine vinegar
  • 1 heaped teaspoon

Method

  • Place the egg yolks, vinegar and mustard in a blender or food processor and mix together. Very slowly, drop by drop, whisk in the oil. As the mayonnaise begins to thicken, create a thin stream of oil, continuing to pour until it has totally blended with the yolks.
  • Season with salt and pepper and finish with the lemon juice.
