  • 2 large chicken breasts, skinless and sliced into thin strips
  • salt and pepper

Method

  • Heat a large deep frying pan with the olive oil. Season the chicken strips with salt and pepper, add to the hot oil and fry over a high heat, turning once or twice.
  • Add the red onions and garlic to the pan with a large knob of the butter and continue to fry for 5-6 minutes.
