- Heat a large deep frying pan with the olive oil. Season the chicken strips with salt and pepper, add to the hot oil and fry over a high heat, turning once or twice.
- Add the red onions and garlic to the pan with a large knob of the butter and continue to fry for 5-6 minutes.
- Add the remaining butter and sage, seasoning with salt and pepper.
