This deliciously moist bread is always found on the breakfast buffet at any Bajan restaurant, cafe or resort. Flavoured with vanilla, nutmeg and sometimes rum, it goes perfectly with tropical fruit, as well as with the local speciality of fried flying fish. I remember sitting on a sunny terrace by the pool in Barbados many years ago, with a plate of fresh tropical fruit and several slices of warm, just-baked banana bread, and thinking what a wonderful way it was to start the day. A very easy recipe with every day ingredients. Perfect for using up any languishing bananas. I didn't have any rum but I am sure it would add to the flavour!

This is a very delicious banana bread! I made it with brown flour and put a sliced banana on top before baking. I didn’t add the rum as we were having it for breakfast. Next time I’ll try it with less sugar as it was quite sweet as a breakfast food. Looking forward to having another slice with a cup of tea later!
