Bajan Breakfast Banana Bread

This deliciously moist bread is always found on the breakfast buffet at any Bajan restaurant, cafe or resort. Flavoured with vanilla, nutmeg and sometimes rum, it goes perfectly with tropical fruit, as well as with the local speciality of fried flying fish. I remember sitting on a sunny terrace by the pool in Barbados many years ago, with a plate of fresh tropical fruit and several slices of warm, just-baked banana bread, and thinking what a wonderful way it was to start the day.
