My version of the classic ice cream parlour treat which I used to enjoy in The Shatin Heights Hotel in Hong Kong. It’s simply vanilla ice cream that is added to a glass of cream soda. But it’s so much more than that to me as it somehow represents the freedom, excitement and fun I had as a child growing up in Hong Kong during the 1960s.

Ingredients

  • 600 ml cream soda
  • 2 x 50 g scoops vanilla ice cream

Method

  1. Pour 300ml of cream soda into each glass.
  2. Add the scoop of vanilla ice cream to the cream soda and add a straw or a long parfait spoon.
