The tartness of this sauce is the perfect accompaniment to roast pork, as pictured, and also for more fatty meats, such as duck or goose.

Ingredients

  • 4 medium-large cooking apples, peeled and cut into small cubes
  • pinch of cinnamon or cumin
  • 2 teaspoons

Method

  1. To make in a saucepan, combine the apple cubes, cinnamon or cumin and sugar in a pan and add enough water to barely cover the base of the pan. Cover with greaseproof paper and a lid and cook the apples over low-medium heat for 10–15 minutes, or until the apples have broken down to a purée.
