An interesting variation on a classic vinaigrette. Delicious served with smoked trout as pictured here.

Ingredients

  • ½ cucumber, about 100 g ( oz)
  • 3 teaspoons

Method

  1. Fill a small pan with salted water and bring to the boil. Peel the cucumber and reserve both the flesh and the peel. Remove and discard the cucumber seeds. Add the peel to the water, return to the boil and lower the heat to simmer until just tender. Drain the peel and place in a bowl of iced water for 10 seconds, then drain. Process the skin in a blender with the vinegar
