Very versatile, this all-time favourite dressing may be served with either vegetables, pears or avocado as shown here.


  • 80 g ( oz) crumbly blue cheese, (Roquefort or Stilton are ideal)
  • 80 ml


  1. In a small glass bowl, crumble the blue cheese and mash it to a smooth paste with a fork.
  2. To make a vinaigrette, in a separate bowl, whisk together the vinegar and salt and pepper, to taste. While whisking, gradually add the oil in a thin steady stream until the mixture is thick and smooth, i.e. emulsified.
