Method

  1. In a blender, puree the whole oranges, simple syrup and xanthan gum until a smooth mixture is achieved.
  2. On 2 half sheet pans lined with silicon mats, spread the mixture thin. Dehydrate in an oven at 52C (125F), about 4 hours or until completely dry. When dried out, break into shards and reserve in an airtight container.
